Ingredients
- •500g cremini mushrooms, finely sliced
- •4 cloves black garlic
- •1 small shallot, minced
- •250ml heavy cream
- •4g agar-agar powder
- •1 tsp sea salt
- •1/2 tsp cracked black pepper
- •150g granulated sugar
- •100ml water
- •100g glucose syrup
- •70g sweetened condensed milk
- •10g powdered gelatin, bloomed in 50ml cold water
- •5g food-grade activated charcoal powder
- •2 large Russet potatoes
- •20ml neutral oil
- •1 sheet edible silver leaf
Instructions
- 1In a pan over medium heat, sauté the mushrooms and shallots until deeply browned and all moisture has evaporated.
- 2Transfer the mushrooms to a high-speed blender with black garlic, cream, salt, and pepper; process until a velvet-smooth purée forms.
- 3Return the purée to a saucepan, whisk in the agar-agar, and bring to a simmer for 2 minutes to activate.
- 4Pour the mushroom mixture into 1-inch silicone cube molds, smooth the tops, and freeze for 4 hours until solid.
- 5Prepare the glaze by bringing sugar, water, and glucose to a boil (103C), then whisk in condensed milk, bloomed gelatin, and charcoal powder.
- 6Strain the charcoal glaze through a fine-mesh sieve and allow it to cool to 32C for the perfect coating consistency.
- 7For the potato parchment, slice potatoes to 1mm thickness using a mandoline, brush with oil, and bake between two silicone mats at 150C for 15 minutes until translucent and crisp.
- 8Unmold the frozen mushroom cubes and place them on a wire rack; pour the room-temperature glaze over them until fully coated in a graphite gloss.
- 9Allow the cubes to thaw in the refrigerator for 20 minutes before placing each one onto a square of potato parchment.
- 10Using precision tweezers, apply a single delicate flake of silver leaf to the top center of each cube and serve in minimalist laboratory glassware.
