Midnight Cocoa & Sea Salt Velours Torte
An intensely dark, flour-light torte that achieves a sophisticated, fudge-like consistency through the high ratio of Dutch-processed cocoa. This dessert features a delicate, paper-thin crackle on the surface that yields to a dense, silken interior. To balance the deep bitterness of the 165g of premium cacao, the torte is finished with a light dusting of espresso-infused cocoa powder and a sprinkle of Maldon sea salt flakes, offering a complex profile that bridges the gap between a classic brownie and a gourmet truffle.
Recipe
Cook Time: 55 minutes plus cooling
Servings: 10-12 servings
Ingredients
- •225g unsalted European-style butter, melted and slightly cooled
- •400g granulated white sugar
- •4 large organic eggs, at room temperature
- •2 teaspoons pure vanilla bean paste
- •165g premium Dutch-processed cocoa powder, sifted
- •60g all-purpose flour, sifted
- •1 teaspoon high-quality espresso powder, divided
- •1/2 teaspoon fine sea salt
- •1 tablespoon Maldon sea salt flakes, for finishing
- •1 tablespoon extra cocoa powder, for dusting
Instructions
- 1Preheat your oven to 325°F (165°C) and line the bottom of an 8-inch springform pan with parchment paper, greasing the sides with butter.
- 2In a large bowl, whisk the melted butter and granulated sugar vigorously for 2 minutes; this aeration is key to creating the delicate crackle surface.
- 3Incorporate the eggs one at a time, whisking for 30 seconds after each addition until the batter is glossy and smooth.
- 4Stir in the vanilla bean paste and 1/2 teaspoon of the espresso powder.
- 5Gently fold in the 165g of sifted cocoa powder, flour, and fine sea salt using a rubber spatula until no dry streaks remain, being careful not to overwork the batter.
- 6Pour the batter into the prepared pan and level the surface with an offset spatula.
- 7Bake for 30 to 35 minutes; the torte should have a slight wobble in the center and a thin, papery crust on top.
- 8Remove from the oven and allow to cool completely in the pan on a wire rack for at least 2 hours to develop the fudge-like interior.
- 9Once cooled, whisk the remaining 1/2 teaspoon of espresso powder with the extra tablespoon of cocoa powder in a fine-mesh sieve.
- 10Dust the torte evenly with the espresso-cocoa mixture and finish with a generous sprinkle of Maldon sea salt flakes.
- 11Slice with a warm, sharp knife, cleaning the blade between cuts to ensure a perfect presentation.
