- •1 small head cauliflower, florets only
- •100g mascarpone cheese
- •50ml heavy cream
- •Fine white pepper and sea salt
- •1 narrow sourdough baguette
- •1 teaspoon food-grade activated charcoal powder
- •200g pitted Kalamata olives
- •1 tablespoon nonpareil capers
- •1 clove garlic, minced
- •12 marinated silver-skinned anchovies (boquerones)
- •1 large English cucumber
- •12 baby Yukon Gold potatoes
- •3 tablespoons coarsely cracked black peppercorns
- •2 tablespoons grey Celtic sea salt
- •12 mini mozzarella pearls (bocconcini)
- •2 tablespoons extra virgin olive oil
Instructions
- 1For the Alabaster Coulis: Steam cauliflower florets until very tender. Blend with mascarpone and heavy cream until perfectly smooth. Season with white pepper and salt. Strain through a fine-mesh chinois and transfer into 10ml glass vials.
- 2For the Obsidian Crisp: Slice the baguette into ultra-thin rounds. Whisk charcoal powder into 1 tablespoon of olive oil and brush onto the bread. Bake at 175C for 6-8 minutes until crisp. Pulse olives, capers, and garlic into a thick paste and place a small quenelle on each crisp.
- 3For the Argentum Scale: Use a vegetable peeler to create long, translucent ribbons of cucumber. Fold the ribbon into a geometric pleat and drape one silver-skinned anchovy over the top.
- 4For the Graphite Pomme: Boil baby potatoes in salted water until just tender. Drain and let steam dry. While warm, toss in a small amount of oil, then roll in a mixture of cracked black pepper and grey sea salt until fully coated. Skewer with silver picks.
