- •2kg Cauliflower, florets only

- •1L Heavy Cream (35% fat)

- •100g Activated Charcoal Powder

- 11. THE CLINICAL SPHERE: Poach chicken breast in a white bouillon until internal temperature reaches 74C. Blend chicken with 200ml cream and cauliflower puree until ultra-smooth. Season with white pepper and salt. Mix 10g agar agar into 500ml water, boil, and cool slightly. Pour the chicken mousse into spherical molds, freeze partially, then dip into the agar solution to create a clear, clinical coating. Serve on a silver spoon.
- 22. THE LABORATORY TUBE: Cure salmon in a mixture of salt, sugar, and white balsamic for 4 hours to firm and whiten the flesh. Puree the cured salmon with horseradish and crème fraîche until it reaches a pale, pearlescent consistency. Transfer to a piping bag and fill chilled glass test tubes. Top with a tiny shard of silver leaf.
