Recipe
Prep Time: 20 minutes
Cook Time: 25 minutes
Servings: 2 servings
Ingredients
- •2 skin-on duck breasts (6-8 oz each)
- •1 medium head of cauliflower, cut into small florets
- •1/4 cup heavy cream
- •4 tbsp grass-fed unsalted butter, divided
- •1/2 cup fresh blackberries
- •1/4 cup apple cider vinegar
- •2 tbsp granulated monk fruit sweetener
- •4 fresh thyme sprigs
- •1/4 cup toasted hazelnuts, roughly chopped
- •Kosher salt and freshly cracked black pepper to taste
Instructions
- 1Score the duck breast skin in a crosshatch pattern using a sharp knife, being careful not to cut into the meat. Season generously with salt and pepper on both sides.
- 2Place the duck breasts skin-side down in a cold, heavy-bottomed skillet. Turn the heat to medium-low. Allow the fat to render slowly for 12-15 minutes, pouring off excess fat periodically, until the skin is golden brown and very crispy.
- 3While the duck renders, steam the cauliflower florets until very tender, about 8-10 minutes. Drain thoroughly and pat dry with paper towels to remove excess moisture.
- 4Transfer the hot cauliflower to a high-speed blender. Add the heavy cream and 2 tablespoons of butter. Blend on high until the texture is completely smooth and 'silky'. Season with salt and white pepper; keep warm.
- 5Increase the duck skillet heat to medium-high. Flip the duck breasts and sear the meat side for 3-4 minutes for medium-rare (internal temperature of 135°F/57°C). Remove from pan and let rest on a cutting board for 8-10 minutes.
- 6In a small saucepan over medium heat, combine the blackberries, apple cider vinegar, monk fruit sweetener, and thyme sprigs. Simmer for 6-8 minutes, mashing the berries with a spoon, until the liquid reduces by half and becomes syrupy.
- 7Remove the thyme sprigs from the gastrique and whisk in the remaining 2 tablespoons of butter to create a glossy emulsion. Adjust seasoning if needed.
- 8To serve, spread a generous spoonful of cauliflower silk onto each plate. Slice the duck breast on a bias and fan over the purée. Drizzle with the blackberry-thyme gastrique and garnish with toasted hazelnuts and fresh thyme leaves.
